Chocolate Chunk Protein Banana Bread

Yields1 Serving

 3 Mashed Spotty Bananas (pro tip, use a potato masher on a mat to make this go faster)
 2 tbsp Pure Maple Syrup
 2 tbsp Liquid Coconut Oil
 2 Eggs (room temp)
 1 tsp Pure Vanilla Extract
 2 cups Almond Flour (I use Bob's Red Mill)
 2 Scoops of Bob's Red Mill Chocolate Protein Nutritional Booster Powder
 1 tbsp Cocoa Powder (Dutch Pressed)
 1 tsp Baking Powder
 1 tsp Baking Soda
 pinch of salt
 chocolate chunks (as much as your heart desires)
This is new take on my classic banana bread! This time, with some extra protein punch with Bob's Red Mill Chocolate Protein Powder. It has chia and probiotics too. It can also be great in smoothies! Sometimes chocolate protein powders can make baked goods taste super bitter and ruin a recipe like this - but this one worked perfectly! It was gone in my house in days and I even made another one for Jacob to take to the hospital! All the resident's loved it. Win win! Hope you guys enjoy this one!

Pre-heat oven to 350 and grease a loaf pan with coconut oil spray and set aside.

Add wet ingredients into a mixer (stand mixer or hand mixer work fine) and combine well.

Once wet ingredients are mixed, all in dry ingredients. Combine well until a consistent batter is formed. Taste it to make sure it is to your liking (best part!). You can add a touch more maple syrup or vanilla if you want some more sweetness.

Fold in chocolate chips or a broken up chocolate bar. You can also add walnuts, almonds or coconut flakes. Whatever you love!

Mix again to combine add-ins.

Pour batter into loaf pan. Shake loaf pan to even out the batter. Top with more chocolate chunks and oats.

Add to oven and bake for 50 minutes. Use a toothpick to make sure it is ready!

Let cool for 10 minutes and enjoy! I love a slice with almond butter and coffee in the morning.
