Creamy Gingerbread Maple Oatmeal

For the Oatmeal:
 1.50 cups Quick Cooking Oats or Rolled Oats (can be gluten free)
 2 Egg Whites (From whole eggs)
 1.50 cups Almond Milk
 1 tsp Cinnamon
 1 tsp Gingerbread
 ½ tbsp Maple Syrup
Additional Toppings:
 Maple Syrup
 Berries
 Peanut Butter

Crack 2 eggs and separate the egg whites into a small bowl. Set aside.

Add milk, oats and spices to a small pot. Mix well. I like to use a spatula here to get everything mixed in from the sides of the pot.

Set heat to medium and bring to a slight boil. Mix well for 2 - 3 minutes until the oats are partially cooked. Add in the egg whites. Mix well again for another 2 -3 minutes. It should get fluffy!

When it’s done, add to a serving bowl and top with more spices, berries and nut butter and some maple syrup.
