Chocolate Chia Banana Muffins (Gluten Free)

Yields1 Serving

 3 Spotty Bananas
 3 Eggs
 1 tsp Vanilla
 ¼ cup Maple Syrup
 1 tsp Baking Powder
 2 tbsp Cocoa Powder (Dutch Pressed)
 2 tbsp Chia Seeds
 1.50 cups Almond Flour
 Dark Chocolate Chips/ Chunks for mixing / topping

Preheat oven to 350.


Mash bananas well and mix in a large bowl with eggs, maple syrup and vanilla.


Once mixed well, add in baking powder, chia seeds and cocoa powder. Mix well again.


Finally, add in almond flour and continue to mix until all ingredients are smooth and well combined. Add in the desired amount of chocolate chips.


Grease a muffin tin with coconut oil spray and evenly distribute the batter into each vessel. Add more chocolate chips/chunks on top.


Bake for 20-25 minutes. Let cool (if you can wait) and enjoy!
