Healthy Turmeric Apple Fritters

These doughy and delicious turmeric apple fritters totally hit the spot! I enjoy them warm with some drizzled honey - so good! The collagen adds some good protein to these treats. You will love these!
 1 Granny Smith Apple (Cut into small pieces) - a whole small apple or half a large one will be fine.
 2 Large Eggs
 ½ cup Unsweetened Apple Sauce
  cup Pure Maple Syrup
 ¼ cup Vanilla Almond Milk (I use Califia farms)
 1 tsp Pure Vanilla Extract
 1.50 tbsp Coconut Sugar
 1.50 cups Gluten Free Flour Blend (I use Namaste Foods Flour Blend)
 ¼ cup Coconut Flour
 2 tsp Baking Powder
 3 scoops Further Foods Collagen Peptides*
 1 tsp Cinnamon
 1 tsp Turmeric
 Raw Honey (to drizzle on top)
 Extra Cinnamon to Sprinkle

Pre-heat oven to 375 degrees. Grease a muffin tin with coconut oil spray or canola oil spray. Set aside.

Cut up granny smith apple and place in a bowl. Sprinkle with some cinnamon and drizzle with honey. Let sit for a few minutes while preparing the other ingredients.

In a mixer or large bowl, add eggs, almond milk, maple syrup, apple sauce & vanilla. Mix until well combined.

Add in coconut sugar and collagen peptides. Mix until both are dissolve

Add in honey-cinnamon apple pieces, gluten free flour, coconut flour, cinnamon, turmeric and baking soda. Let mixer go for a few minutes until a thick dough is formed.

With an ice cream scooper, place heaping scoops of batter into greased muffin tin. Shake the muffin tin to let the dough settle a little.

Sprinkle cinnamon on top and drizzle some raw honey.

Bake at 375 for 20- 22 minutes. Edges will turn golden brown when finished. They should pull apart easily and have a fluffy and doughy consistency.
