HEART SHAPED GF BANANA PANCAKES

These are super easy, delicous, gluten free and can be easily vegan! I got these heart shaped holders at a store in Toronto, but I found them online here! These would be a perfect valentines day weekend brunch! Enjoy!

Yields1 Serving

 2 Large Ripe Bananas
 ¼ cup Unsweetened Almond Milk
 1 tsp Vanilla Extract
 1 tsp Baking Powder
 1 Scoop of Protein (I used flavorless Collagen Peptides, you can use vegan protein too)
 ½ tsp Cinnamon
  cup Gluten Free Oat Flour
 Dairy Free Chocolate chips / Berries for toppings / mix ins
 Coconut Oil Spray (for pan when cooking)

Mash bananas with a hand mixer in a mixing bowl. Make sure they are mixed very well and near liquidy!

Add in remaining wet ingredients (vanilla, almond milk) and mix well.

Add in collagen, baking soda, cinnamon and flour! Mix well again! You can add in mix-ins here or wait until they are cooking on the pan.

Heat up coconut oil in a pan on medium. Place heart shape mold on pan. Fill mold 3/4 way up with batter and let cook for a few minutes. When the edges are slightly brown and the pancakes is bubbling, you know it is time to flip! The second side will need less time to cook!

Batter makes 7-8 pancakes! Once they are all done, top with all your faves. I love chocolate chips, pomegranates and blueberries.
