Mini Savory Pecan Banana Breads

Yields1 Serving

 2 Ripe Mashed Bananas
 6 tbsp Olive + Sunflower Oil (I use Life Oil Non GMO - All Purpose Blend)
 ½ cup Maple Syrup
 1 tsp Vanilla Extract
  cup Almond Creamer (adds to the density)
 1 tsp Baking Soda
 1.75 cups Gluten Free Oat Flour
 Chopped Raw Pecans (for mixture)
 Full Raw Pecans (for topping)
 Peanut Butter (or any nut butter to drizzle)

Preheat oven to 350 degrees. Grease (with oil spray) a mini loaf pan (or regular loaf) and set aside

Add wet ingredients in a mixer until well combined. Make sure to pre-mash the bananas until they are minimal chunks.

Add in dry ingredients. Mis until well combined.

Mix in raw chopped pecans. Feel free to add other nuts as well. Mix everything all ingredients form a smooth batter.

Add batter to greased pan and bake. For mini loaves - bake for 20 - 25 minutes. For full bread loaf pan, bake for 45 - 50 minutes.

Let cool for 15 minutes and enjoy!
