Classic Chocolate Chip Banana Bread (Gluten Free)

Banana bread is truly how I started experimenting with baking! I just love it so much, and honestly I will never get sick of it! This recipe is my original, classic chocolate chip banana bread that I have honestly been making for years! And it's gluten free!

Ok, short story time:

Did you know that a big part of how I started my business was selling baked goods in my apartment complex on Thursday mornings? I would work for days to prepare 50+ baked goods and sit in the lobby hoping to sell a few healthy treats to people on their way to work. Even though I basically lost money doing this, I still enjoyed every minute of it. I was getting my brand, my name and passion out there. It was worth it to me! Everyone has to start somewhere and for me, that was it! Eventually, I started sharing my recipes through social media and the blog instead of selling to people in real life. It was for the best, but I always look back on that time with a warm heart. It was a huge turning point for me. I knew nothing and had no idea what would come of all of this. Today, I am grateful to be sharing my recipes are creations with thousands, impacting people's lives and doing what I love. Just writing this post makes me proud. And back to the recipe... Here is what you need:

  • Ripe, Spotty Bananas
  • Eggs
  • Unsweetened Applesauce
  • Coconut Oil
  • Pure Vanilla Extract
  • Oat Flour 
  • Flaxseed meal
  • Coconut Sugar
  • Cinnamon
  • Baking Soda
  • Dark Chocolate Chips

Ingredients:

 2 Ripe Spotty Bananas
 2 Eggs
 ¼ cup Unsweetened Apple Sauce
 ¼ cup Coconut Oil (Melted and cooled or liquid)
 1 tsp Pure Vanilla Extract
 1.50 cups Gluten Free Oat Flour
 2 tbsp Flaxmeal (for extra fiber - you can omit if you like)
 ¼ cup Coconut sugar
 ½ tsp Cinnamon
 1 tsp Baking Soda
 ½ cup Dark Chocolate Chips

Directions:

Preheat oven to 350.

Mash bananas well so that the chunks are fairly small. I love using a potato masher and cutting board. You can also use a bowl/ fork or an electronic mixer.

Add mashed bananas, eggs, coconut oil (melted or liquid), apple sauce and vanilla in a large bowl and mix well.

Add baking soda, cinnamon, coconut sugar, flaxmeal and oat flour in the bowl. Mix again until the batter forms.

Add in chocolate chips and any additional desired toppings.

Grease and/or line a mini loaf pan, large loaf pan or muffin tin with coconut oil spray. Add batter into the pan of your choice. Top with some additional chocolate chips and rolled oats. Place in the oven to bake.

Mini loaf pan - 25 minutes
Large loaf pan - 55 minutes
Muffins - 20 minutes

Let cool and enjoy!
