OATMEAL COCONUT CHOCOLATE CHIP COOKIES

Yields1 Serving

 2 Eggs
 3 tbsp Pure Maple Syrup
 3 tbsp Coconut Oil (I use Purly Grown)
 3 tbsp Creamy Natural Almond Butter (make sure it is liquidy)
 1 tsp Pure Vanilla Extract
 1 cup Gluten Free Oats
 1 cup Almond Flour
 1 tsp Baking Powder
 2 tbsp Shredded Coconut
 1 tsp Cinnamon
 Dairy Free Chocolate Chips

Set oven to 350 degrees

Melt coconut oil and let cool for 5 minutes.

Add all wet ingredients in a mixer and combine well.

Add all dry ingredients in the mixer and combine well.

Using an ice cream scoop, scoop cookie dough on a cookie sheet (lined with parchment paper) and flatten with your palm.

Bake for 15-18 minutes (until golden brown on the edges). Let cool and enjoy!
