
Prepare egg salad- Cube hard boiled eggs (I like using a egg slicer for quick and easy little pieces!). Add eggs in a bowl with a squeeze of mayo, honey mustard, and a pinch of salt, pepper, and elote seasoning to taste. Mash/mix together using a fork.
Prepare tortilla- I like to lightly warm/toast my tortilla in a pan with a little bit of oil. This adds such a great texture and flavor!
Assembly- Add mixed greens then egg salad onto tortilla. Top with pickled onions, shredded cheddar, and a sprinkle of parsley flakes. Enjoy!
