 1 Medium Red Onion, Diced
 2 Bell Peppers, Diced
 1 tsp Minced Garlic
 2 tbsp Olive Oil
Salt and Pepper to Taste (lots)
 ½ tbsp Italian Seasoning
 1 tsp Paprika
1 tsp Chili Flakes or Calabrian Chili Paste (Bombas sauce from Trader Joes is great)
 3 tbsp Tomato Paste
1 Can Diced Tomatoes (14 oz)
 1 tbsp Balsamic Vinegar
 2 lbs Ground Beef
2-4 C Lentil Pasta or Pasta of your choice
You can also serve with burrata, goat cheese or parm! So good.
1

Dice onion and peppers and set aside.

2

In a large pot, heat olive oil on medium. Add in diced onions, salt and pepper. Mix for 2 minutes until onions tender. Add in garlic and mix.

3

Add in peppers, mix well and let cook for 3-4 minutes while stirring.

4

Add in ground beef. Using some muscle, mix it well and let it cook at the same time. You need to break it up and let it brown. Takes about 5-7 minutes.

5

Add in paprika, Italian seasoning, Chili flakes or Calabrian Chilis, diced tomatoes, tomato paste, and balsamic vinegar. Combine it all well. Very well! Season more with salt and pepper to your liking.

6

Let it simmer for about 10-15 minutes. Prepare pasta of your choice.

7

Enjoy with your fave pasta, on its own or on rice.
