Sweet Sesame Salmon Bowl

 1 Piece of Salmon (8-10 oz)
 2 Stalks of Bok Choy
 1 cup Sliced Mushrooms
 ½ cup Shredded Carrots
 ¼ cup Shelled Edamame
 1 tbsp Avocado Oil
 1 cup Cooked Brown Rice
 Sesame Seeds and Scallions to garnish
The Sauce
 3 tbsp Toasted Sesame Oil
 3 tbsp Soy Sauce or Coconut Aminos
 ½ tbsp Honey
 ½ tsp Garlic Powder
 1 tsp Sesame Seeds
 Pinch of Chili Flakes
 Salt to taste

Preheat oven to 400 degrees.

Combine all ingredients for the sauce into a mason jar and shake well.

Place salmon filet on a baking sheet. Coat generously with sauce. Use a spoon or brush to really coat the salmon well. Sprinkle with sesame seeds. Set aside.

Heat up Avocado Oil in a pan. Add all vegetables to it and toss with salt to taste. Cover and let cook on medium for 10 minutes or until veggies are tender.

As veggies are cooking, place salmon in the oven. Bake for 10 minutes. Less if you want it to be medium and longer if you like it well done.

Prepare brown rice (I use the 3 minute microwave kind). Add it to the base of a bowl when done.

When veggies are ready, add in the remaining sauce and toss. You can also add sauce on top of veggies once they are in the bowl. Both work!

Finally, when the salmon is finished cooking, add to the bowl. Season with more sesame seeds and garnish with scallions. Drizzle with the rest of the sauce. Enjoy!
