Warm Arugula Salad

 2 cups Arugula
 ½ cup Sun dried Tomato Pieces
 ¼ cup Goat Cheese Crumbles (or more if you LOVE it)
 1 Small Red Onion, Sliced (or half a medium)
 ½ cup Sliced Mushrooms
 1 tbsp Olive Oil for cooking
 2 tbsp Lemon Herb Dressing (Grandma Luckeys)
 Salt and Pepper to Taste
 Optional: Pair with grilled salmon, shrimp or chicken

Thinly sliced small red onion (or half a medium one).


Heat up olive oil in a pan on medium. Add in red onions and season with salt. Cook for 5 minutes.


Add in mushrooms and mix. Cook for another 5 minutes.


While onions/mushrooms are cooking, compile other toppings in your salad bowl. Start with arugula (dress lightly) and then add sun-dried tomatoes and goat cheese.


When mushrooms and onions are ready add on top.


Drizzle more dressing and add fresh ground pepper to taste.


Enjoy on its own or pair with a protein!
