These Mini Coffee Breads came out of some inspiration I had the other day to bake with coffee grounds since I got a new coffee machine and started grinding my own beans. They smell absolutely incredible and I thought they would spice up some banana bread in the BEST way! So here we are!
NOTE: to make the muffins square, I use this pan from Amazon. It is technically a brownie pan, but I love it for making mini "breads" aka square muffins.

Ingredients:
1Spotty Banana
1Egg
¼cupGreek Yogurt (can sub coconut cream or apple sauce)
1tspVanilla
¼cupMaple Syrup
2tbspBrewed Coffee / Espresso
1cupWhole Wheat Flour (can sub GF all purpose)
1tbspCoffee Grinds
1tspCinnamon
½tspBaking Powder
Directions:

Preheat oven to 350. Mash up the banana and mix with egg, Greek yogurt, vanilla, maple syrup, and coffee. Combine all wet ingredients very well.

Add in flour, baking powder, cinnamon, and coffee grinds to the wet ingredients and mix well again.

Grease a muffin tin / mini square bread tin (I got mine on Amazon) with coconut oil spray and evenly pour batter into the vessels. Bake for 20 minutes. This makes 6 BIG muffins / mini loaves of bread or 12 smaller ones. If you make a loaf, bake for 45 to 55 minutes
