It is oatmeal season! I love a cozy bowl of warm oats in the morning on a cold day. They are so satisfying and a great canvas for all the toppings! I also love making oatmeal on the stove because the texture gets so much creamier. I also added egg whites to this one for some extra protein! The gingerbread spice and cinnamon really give it a seasonal flare. I love it! I hope you enjoy.
1.50cupsQuick Cooking Oats or Rolled Oats (can be gluten free)
2Egg Whites (From whole eggs)
1.50cupsAlmond Milk
1tspCinnamon
1tspGingerbread
½tbspMaple Syrup
Additional Toppings:
Maple Syrup
Berries
Peanut Butter
Directions:

Crack 2 eggs and separate the egg whites into a small bowl. Set aside.

Add milk, oats and spices to a small pot. Mix well. I like to use a spatula here to get everything mixed in from the sides of the pot.

Set heat to medium and bring to a slight boil. Mix well for 2 - 3 minutes until the oats are partially cooked. Add in the egg whites. Mix well again for another 2 -3 minutes. It should get fluffy!

When it’s done, add to a serving bowl and top with more spices, berries and nut butter and some maple syrup.
