Ingredients:
1cupBob's Red Mill 10 grain Pancake + Waffle Mix
2tbspFlax meal (also optional, but I love to add for extra fiber)
1cupWater or Almond Milk
2Eggs
½tspPure Vanilla Extract
1tspCinnamon
1cupFrozen Wild Blueberries
Directions:

Turn on waffle maker and set to medium.

Add all ingredients into a bowl or stand mixer and mix well. Add blueberries in last.

When the waffle maker is ready for batter, spray it with coconut oil to prevent the batter from sticking.

Pour batter into the waffle maker and close. Let me cook until the machine indicates the waffles are ready. I like mine crispy, so I put it on a higher temp.

Enjoy with fresh peaches and some pure maple syrup!
*You can also cook as pancakes on pan/stove top.
