Miso Hot Honey Salmon Bowls

Miso hot honey salmon bowls - one of my fave easy weeknight dinners. So full of flavor and so easy to throw together.  

Serves 2:

Marinade:

1/4 c coconut aminos (or soy sauce)

1 tbsp miso paste (I got at trader joes)

1-2 cloves garlic, minced

1/4 tsp ground ginger

2 tsp hot honey or a Generous squeeze (if you don’t have hot honey, add regular honey and a pinch of chilli flakes)

2 fresh Salmon Filets (6-8 oz)

Bowl ingredients:

Jasmine Rice (or rice of your choice)

Marinated cucumbers or sliced cucumbers (I marinated overnight with half hot water, half rice wine vinegar, salt and chili flakes)

Steamed edamame (i get the precooked frozen from tjs)

Chili crunch mayo - mix chili onion crunch with mayo. Option to swap with sriracha.

Cube salmon and add to a bowl. You an also remove the skin if you want, but I like the crispy skin!

Mix all marinade ingredients together and pour over salmon pieces.

Cover and let marinate in the fridge for at least 30 mins if you can. The longer the better.

Cook on a medium skillet with some non stick spray or oil. Cook for about 5 minutes. Flip in between. If you like your salmon more well done, cook 1-2 minutes longer. The pieces are small so they do not take long.

Remove from heat and assemble all ingredients in a bowl. Add a dollop of chili crunch mayo.
