Peanut Butter White Chocolate Banana Muffins

Peanut Butter White Chocolate Banana Muffins

I will never be over making banana muffins! The options are endless. I love making my classic banana bread recipe and switching up the combinations/ mix ins. For this version, that is peanut butter and white chocolate. Such a fan of peanut butter in baked goods (duh) and white chocolate makes it extra sweet. So delicious! These are gluten free too!

What you need:

Ingredients:

 2 Spotty Mashed Bananas
 2 Eggs
2 tbsp Avocado Oil (or melted / liquid coconut oil)
 ¼ cup Maple Syrup
 ¼ cup Creamy Peanut Butter
 ½ tsp Vanilla Extract
 ½ tsp Baking Soda
 1.50 cups Almond Flour
 ½ cup White Chocolate Chips

Mash ripe bananas well in a large mixing bowl. Add in eggs and whisk until well combined. Add in oil, maple syrup, almond butter and vanilla and continue to mix all together. You can use a whisk or hand mixer.

3

Add in baking soda and flour. Mix well again to get out all the chunks. Lastly, fold in white chocolate chips.

4

Line/ grease a muffin tin and fill 3/4 the way with batter. Add more chocolate chips on top. Bake for 20 minutes. Let cool and enjoy.
