These Coffee Cake Banana Muffins were born out of my equal love for coffee... and banana bread. Naturally, I had to make a version of my gluten free banana muffins with a little coffee love. Seriously, these are amazing. I personally love the taste of coffee in baked goods so these are a hit in our house.
What you need for this recipe:
- Eggs
- Overripe Bananas
- Maple Syrup
- Avocado Oil or Coconut Oil
- Vanilla
- Fresh ground coffee
- Cinnamon
- Baking Soda
- Almond Flour
- Optional: Chocolate Chips
A note on the coffee: You want to use the same coffee you would brew in your machine, not coffee remains that have been already brewed.

Preheat oven to 350.
Mash bananas in a large mixing bowl with a fork of hand mixer. Add in eggs, vanilla, maple syrup and avo oil. Mix until well combined.
Add in coffee grounds, cinnamon and baking soda. Mix.
Add in almond flour and mix again. Optional to add chocolate chips here. Grease or line a muffin tin and evenly distribute batter in muffin tins (makes 12 small or 8 large) and sprinkle a little coconut sugar on top or more chocolate chips.
Bake for 25 mins! Enjoy!
