Sweet Corn & Burrata Pasta

You have to make this sweet corn & burrata pasta! Pasta + Burrata = 💛 this summer creamy corn pasta with burrata and basil is so good! This is one of my fave summery pasta recipes for sure. 

Serves 2-3 (double to serve 4-6)

Ingredients:

4 ears of corn (husks removed)

1 small shallot, diced

3 tbsp salted butter

3 gloves garlic, minced

1/4 C cream

1/4 C Parmesan cheese (or more honestly), grated

Salt to taste (salt generously)

Freshly ground pepper

1 small handful Fresh basil leaves, chopped and more for garnish

Red pepper flakes to taste

4 oz burrata

1/2 lb dry pasta (1/2 box)

Splash of pasta water

Directions:

Boil water and cook ears of corn for 5 minutes. Remove, let cool and cut off the kernels. Add to a bowl and set aside.

Boil salted water for pasta. Cook simultaneously with the below according to instructions.

Chop garlic, shallot and basil leaves. Set aside.

In a large pan, heat butter on medium. When melted, add in garlic and shallot. Cook / mix for 1-2 minutes. Reduce heat to medium low.

Add in corn kernels and salt to taste. Mix well and let simmer. continue mixing so it does not burn. Reduce heat if needed.

Add in heavy cream, mix and let simmer.

When pasta is cooked al dente, add it in with a splash of pasta water.

Add in Parmesan cheese and basil and mix. Season with more salt and pepper to taste.

Serve with pieces of burrata on top, freshly chopped basil, lots of fresh ground pepper, and chili flakes.
