This creamy lemon cheese pasta is such an easy weeknight meal idea! I love a little lemon flavor in pasta - it’s so simple and delish!

Ingredients:
3 C (or 1/2 lb) Pasta of your Choice
1 cup Farmer Cheese (I used Lifeway Kefir Farmer Cheese, but ricotta also works great)
½ cup Olive Oil
2 tbsp Milk / Cream
1 tbsp Grass Fed Butter
½ cup Pasta Water
¼ cup Pecorino
½ Lemon Squeezed
Toppings: Lemon Zest, Chili Flakes
Fresh Ground Pepper
Directions:

Bring water to a boil with salt.

When boiling, add in pasta and cook according to instructions. When pasta is ready, remove from pot and drain. Make sure to keep pasta water. Add pasta back into the pot. Set to low heat.

Add in olive oil, milk, grass fed butter and lemon juice. Mix well with the pasta till the butter melts.

Add in cheese (ricotta or farmer cheese) and pasta water. Mix
even more. You want it be evenly spread out with the noodles. If it is too thick, add more pasta water.

Serve hot with chili flakes, lemon zest and ground pepper.
