High protein pesto sausage pasta 💚This is a go to for a quick and satisfying dinner. Also love it as leftovers the next day. Enjoy!
Serves 4
1 box Protein Pasta (I used Barilla)
1 Shallot, Sliced thinÂ
2 C Broccoli florets, choppedÂ
4-5 Chicken Sausages, sliced (I used spicy chicken jalapeño sausage from TJs)Â
1 Jar Pesto of your choice (8 oz)
1/2 container (2.5-3 oz) Boursin cheese (I used classic garlic / herb)
Reserved Pasta water
Parmesan for topping
Boil salted water to cook pasta and cook according to instructions.Â
Heat olive oil in a pan on medium-low. Add in sliced shallots and broccoli. Cook down until tender. Add in sausage and mix.Â
Add in pesto, Boursin cheese, cooked pasta, and pasta water. Mix well.Â
Serve with parm and enjoy!Â
