Plant-Based Protein Power Bowls

I am so excited about this recipe on the blog! These Plant-Based Protein Power Bowls are so delicious, simple, and easy to cook. We love a 30-minute meal that makes us feel good and tastes good. This one comes together in a snap with Success Boil-in-Bag Brown Rice. It takes 10 minutes to cook and tastes perfect every time. It is one of those foolproof methods. The rest of the ingredients are all roasted on a sheet pan and the lemon tahini dressing is one of my favorites. I love the mix of broccoli, sweet potatoes, tofu, and chickpeas - talk about power ingredients! Lots of protein! I love high-protein meals, especially on busy days.

Protein Power Bowl with Brown Rice (serves 2):

1 Small Sweet potato, cubed small 
2 C Broccoli Florets
1 Can chickpeas, drained and rinsed 
1 package extra firm tofu, cubed 
olive oil 
salt, pepper, paprika to taste
1 Bag Success Boil-in-Bag Brown Rice 
½ Avocado, sliced 
Microgreens  for garnish 

Lemon Tahini Sauce: 

½ C Tahini (smooth)
¼ C Olive Oil
1 Lemon, juiced
½ tsp garlic powder
1 tbsp honey
salt and pepper to taste
2 tbsp hot water


Preheat oven to 400.

Prepare / chop vegetables. Drain and rinse chickpeas. Dry and cube tofu. 

Add sweet potato, broccoli, chickpeas and tofu evenly to a sheet pan. Drizzle with olive oil and season to taste with salt, pepper and paprika. 

Bake for 20 minutes (or until your crisp liking).

Add all ingredients (except hot water) to a jar for the sauce. Mix well with a whisk or fork. Add in hot water and mix again. This helps smooth and thin it out. Set sauce aside. 

Prepare the Success Boil-in-Bag Brown Rice according to box instructions. Simply submerge one bag in a pot with water. Bring to a boil and boil for 10 minutes. Remove the bag from pot with a fork. Cut open and plate rice. Fluff with a fork if desired. 

Add all other ingredients on top, drizzle with tahini sauce, and top with avocado slices and microgreens.
