Cauli Gnocchi with Pesto & Peas

If you haven't tried cauliflower gnocchi you may be living under a rock (or Canada - they need Trader Joes). It is one of the easiest and most delish meals and I make it at least once a week!  Basically, if you don't know, Trader Joes makes gnocchi made of cauliflower - it is a healthier version of regular gnocchi and Instagram is living for it! I have made this gnocchi in MANY ways, but lately, I am all about it with pesto, peas and pecorino. This recipe takes about 15 minutes and is a winner! 

NOTE: I never follow the instructions on the package to make this gnocchi. I simply cook it directly from frozen in avocado oil on a pan. I do not use any water! 

Yields1 Serving

Ingredients:

 1 Package of Cauliflower Gnocchi
 1 Medium Sweet Onion
 ¼ cup Vegan Pesto (I use the pre-made Kale, Cashew, Basil pesto from Trader Joes)
 ½ cup Frozen Peas
 2 tbsp Avocado Oil
 Shaved Pecorino to taste
 Fresh Pepper to taste

Directions:

Chop up 1 medium sweet onion into 1/4 inch pieces. Heat up 2 tbsp of avocado oil in a pan. When hot, add onion and cook for 5 minutes on medium - high.

When onions are starting to brown, add in 1 package of cauli gnocchi from frozen. Mix to coat in oil. Add in frozen peas and mix to coat in oil as well. Let cook for 7-10 minutes with frequent mixing around until crispy.

Add in 1/4 c of vegan kale cashew pesto (also trader joes) and mix around with gnocchi and peas. Let it heat up. When it's hot, serve with some shaved pecorino or nutritional yeast (if dairy free). Top with some fresh pepper and enjoy!
