My all-time fave, Trader Joe's cauliflower gnocchi, gets a makeover with this fast and easy dinner -- my Cauliflower Gnocchi with Veggies and Red Sauce! The sweetness of the caramelized onions goes so well with the tanginess of the goat cheese, I'm sure you'll love it. I make my gnocchi in a pan, sauteeing it with some oil right from frozen. Always turns out just right!
Here's what you need:
- Onion
- Oil -- olive or avocado oil work well here!
- Cauliflower gnocchi from Trader Joe's
- Your favorite tomato sauce -- if you're feeling adventurous, go for homemade, or find one with a bit of a spicy kick!
- Green peas
- Chili flakes
- Goat Cheese

Heat avocado oil in a deep set pan, then add in the onion. Cook until the onions start to fully cook and crisp a bit around the edges, about 10 minutes. Move the onions to one side of the pan.
Add another tbsp of oil to the pan and pour in the cauliflower gnocchi. Mix and let cook until they start to brown and crisp up, about 7 minutes.
Add in the tomato sauce and frozen peas, and mix everything in the pan together. Let it all heat through for 2-3 minutes.
Serve with chili flakes and goat cheese on top.
