Double Chocolate Protein Pancakes (GF, DF)

We are big fans of pancakes in my house! Especially when they are chocolatey! Made these protein-packed oat flour based pancakes the other day and I will absolutely be making them again. They are dense, delicious and made with simple ingredients! I love adding protein powder to recipes like this because you cannot taste it and it adds some extra nutritional punch. Cannot go wrong with that! 

I used my longtime favorite Health Warrior Chocolate Superfood Protein Powder in these pancakes. The chocolate taste complimented the recipe perfectly. This powder is made up of the good stuff aka real food - chia seeds, pumpkin seeds, flax seeds, hemp seeds and more! I love this because I know I am getting a good source of protein with fiber too. Ingredients:

 3 Eggs
 1 cup Unsweetened Almond Milk
 ½ tsp Vanilla Extract
 1 tbsp Cocoa Powder
 1 Scoop Protein Powder
 ½ cup Gluten Free Oat Flour
 1 tsp Baking Powder
 ½ cup Dairy Free Chocolate chips
 2 tbsp Coconut Sugar (optional)
 Coconut Oil Spray for Cooking

Directions:

Add eggs, almond milk, and vanilla into a large bowl and mix well.

Add in cocoa powder, oat flour, protein powder, sugar (optional) and baking powder into the bowl. Mix well again until a batter is formed. Add in chocolate chips and mix again.

Heat up coconut oil spray on a large pan until bubbly. Pour batter into circles on the pan (desired pancake size) and let cook. When it starts to bubble and brown around the edges, flip. Cook on the second side for half the time. Repeat until the batter is finished. Recipe makes 6-8 pancakes.

Serve pancakes with maple syrup, chocolate chips and some sliced banana! Enjoy!
