Super easy stovetop pumpkin mac & cheese 🧡🎃The ultimate fall comfort food recipe! This one is so easy and SO good. Cozy food season is the best season ☺️
Easy Pumpkin Mac & Cheese (serves 4-6):
1 Box Pasta (1 lb) I used the cutest mini penne @barillaus
3 tbsp salted butter
3 cloves garlic, minced
1 Shallot, diced
1 C Pumpkin purée
1/2 C Whole Milk
2 C shredded cheese (Mix of Gouda and Cheddar)
2-3 tbsp cream cheese (goat cheese would work too)
4 fresh sage leaves, finely chopped
1/4 tsp cayenne (only if you want a little kick)
1/4 tsp paprika
Salt, pepper to taste
1/4 C reserved pasta water
Boil salted water for pasta and cook according to instructions.
Prepare ingredients. Shred cheese, mince garlic, chop sage, and chop shallot.
Add 3 tbsp of butter to a large pot. Heat on medium until fully melted.
Add in shallots and garlic. Mix / cook for less than 1 minute until fragrant. Reduce heat to medium low.
Mix in pumpkin purée followed by whole milk and whisk until smooth.
Add in salt, pepper, paprika, sage and cayenne. Mix well.
Add in shredded cheese with a splash of pasta water. Mix well until cheese is melted.
Add the cooked pasta with more pasta water. Mix.
Lastly, add the cream cheese and mix well until everything is creamy and smooth. Add more pasta water to thin it out.
Always an option to add more cheese!
Serve hot and enjoy.
