Are you guys fans of beets? I am such a fan! They are sweet and I absolutely love them roasted. I love how they are considered nature's candy! The only problem with beets is that they are WORK. Peeling and preparing them is a major to do and needless to say your hands get SO red! I literally save so much time by buying them pre- spiraled and READY TO GO! 2cupsLeafy Greens (spinach, spring mix and kale all work great)
1Package of Cece's Veggie Co Noodled Beets
¼cupCrumbled Goat Cheese
1tbspHemp Seeds
1tbspPumpkin Seeds
Avocado Oil Spray
Protein of your choice: Grilled Shrimp, Grilled Chicken, Grilled Tofu
Easy Balsamic Vinaigrette (1/4 C Olive Oil, 2 Tbsp Balsamic Vinegar, 1 tsp Honey, Sea Salt to Taste)

Preheat oven to 400.

Line a cookie sheet with parchment paper and spray with avocado oil spray.

Place 1/2 package of spiraled beets on the cookie sheet. Spray with more avocado oil and sprinkle with sea salt. Roast for 15 minutes on the middle rack.

In the meantime, prepare the rest of the salad. Dress your greens, top with hemp seeds, pumpkin seeds, and goat cheese. You can also add grilled shrimp, grilled chicken or tempeh! All are delish options for protein with this salad.

When beets are ready and crispy, add on top of salad!
