This was officially the easiest dinner ever! Minimal ingredients and minimal time = the ultimate goal! You can easily throw this together for a weeknight meal with no hassle. The base of this recipe is the Cece's Veggie Co Riced Organic Vegetable Medley (pictured below). Buying the veggies riced and ready to go makes life SO much easier! I wouldn't have it any other way! If you are like me and are crunched for time, but really care about getting in all your veggies you will be obsessed with this! As I am sure you know, they have a ton of pre -spiralized and riced vegetables ready to go. I get them at Whole Foods, but you can check out the store locator here to see where they are available near you!

In a large pan or wok, heat up sesame oil and garlic on medium.
When hot, add the entire container of Cece's Veggie Co Organic Vegetable Medley. Mix around well!
Add in teriyaki sauce, honey and a pinch of salt. Mix well until all the veggies are coated with the sauce.
Turn up the heat and move the veggies over to one side of the pan. Crack 2 eggs into the pan and continue to mix and scramble with the veggies.
Prepare protein of your choice! I air-fried tofu for about 10 minutes on high! You can grill shrimp or chicken as well.
Serve your veggie "fried rice" with your protein and enjoy! If you are into spicy, add some sriracha!
