GF LOADED VEGGIE PIZZA

Who doesn’t love pizza night? I seriously love making a healthy version of pizza once a week for Jacob and I to enjoy. It is one of those foods that you actually do not need to give up if you still want to create a healthy meal.

This pizza is gluten-free and is made with Otamot Sauce - a nutritionally dense, whole food, tomato and vegetable based sauce that tastes incredible. I personally find it very hard to find tomato sauces that offer any sort of nutritional value. There are a few, but for the most part, they are sugar bombs and made with artificial ingredients like high fructose corn syrup. Did I mention added sugar?! I was so pleasantly surprised to discover Otamot Sauce because not only does it taste AMAZING, but is actually made with WHOLE FOODS. Tomatoes, carrots, peppers, sweet potato, butternut squash, spinach, beets, mushrooms, garlic, onion and MORE.  The Essential Sauce is packed with vitamins like vitamin A, D, E, and B12. Plus, there are healthy fats and antioxidants! The sauce is also very versatile - here I made it with my pizza, but you can also enjoy in pasta, soups, shakshuka and even by the spoonful (I have done it).

Ingredients:

 Pizza Crust of your Choice (I used a gluten free box mix)
 ½ cup Otamot Sauce
 ½ cup Mini Pearl Mozzarella Cheese
 ¼ cup Chopped Basil
 1 Large Sweet Onion
 2 tbsp Balsamic Vinegar
 2 tbsp Avocado Oil
 Sea Salt to taste

Directions:

For the balsamic caramelized onions: Chop 1 large onion into long julienne pieces. Place onions in a large pan with avocado oil and sprinkle with sea salt to taste. Saute on low for 20 minutes mixing frequently. Once translucent, add the balsamic vinegar. Keep mixing and cooking on low - medium for another 20- 30 minutes until onions are caramelized to your liking.

Prepare the pizza crust per the instructions on the packaging. I used a gluten free pizza mix. You can also use a tortilla or flatbread of your choice!

When your crust is ready for toppings, prepare to top your pizza. Spread the Otamot Sauce on top of the crust. Add caramelized onions, mozzarella cheese, and chopped basil. Bake on 350 for 10 minutes.
