Get ready to LEVEL up your Mac & Cheese. This recipe will show you how to take the most basic meal of all time up 10 notches to make it gourmet. It was inspired by my husband, Jacob, who literally loves taking a box of Mac & Cheese and making it into a gourmet meal. It's amazing - he has made it for me many time!. So when Inspired Organics released their Organic Mac & Cheese boxes, I had to share it with the world. The released three flavors, Cheddar Elbows, White Cheddar Elbows, and Cheddar Shells. For this recipe, I used the shells, but they all would work! So excited about this one everyone!

Gourmet Mac and Cheese

Ok, so let's get into it. Here is what you need:

  • Box of Mac and Cheese - I used Inspired Organics
  • Shrimp - I used tail-off shrimp that was raw and frozen. You can use pre-cooked too. Fresh also works great.
  • Olive Oil - I used Inspired Organics
  • Sweet Peas - Fresh or Frozen
  • Chopped Broccoli Florets - Fresh or Frozen
  • Paprika, Turmeric, Italian Seasoning, Sea Salt 
  • Chili Flakes and Pecorino (Parm) to taste

This recipe makes enough for a dinner for 2 with some leftovers. It can also be a side for 4 people.

Ingredients:

 1 12 oz Box of Cheddar Mac & Cheese
 ¼ cup Extra Virgin Olive Oil
 2 cups Shrimp
 1 cup Sweet Peas
 1 cup Broccoli Florets
 ½ tsp Paprika
 ½ tsp Turmeric
 ½ tsp Italian Seasoning
 Sea Salt to Taste
 Chili Flakes and Pecorino for toppings

Directions:

Bring pot of water to a boil. When boiling, pour noodles in and mix with some sea salt. Let cook for 7-8 minutes.

While noodles are cooking, prepare the remaining ingredients. Chop broccoli, measure peas / olive oil, and remove the tails from shrimp. Set aside the spices. Prepare the spices.

When noodles are done, strain and set aside. Put the hot pot back on the stove and set on medium-low. Pour olive oil in the pot and let it heat. Add shrimp and mix so they start cooking. Add in paprika and mix. Let the shrimp cook until they are opaque (about 2-3 minutes depending on size).

Add in vegetables. These can be fresh or frozen. Frozen may take a little longer to cook. Mix and cover for about 2-3 minutes to let them cook.

Add noodles back into the pot with the shrimp and vegetables. Mix well.

Add in the cheese sauce and mix very well until everything is coated. Add in turmeric, italian seasoning and salt to taste and mix very well.

When everything is hot, it is ready to cook.

Remove from eat and serve with chili flakes and fresh pecorino on top! DELISH!
