Homemade Espresso Peanut Butter

Peanut butter literally runs in my veins! I love it so so much. This was my first time making it myself. I wanted to make a flavor of some sort and of course, coffee came to mind!  It was actually super easy. All you need are peanuts, coffee grinds, coconut oil, and a really powerful food processor. Check check check! I hope you enjoy!

Homemade Espresso Peanut Butter

Ingredients:

 2 cups Roasted Peanuts (Salted or Unsalted works)
 1 tbsp Coffee (Fresh Coffee Grinds, brewed)
 1 tbsp Coconut Oil (I used Refined, it has less of a coconut taste)

Directions:

Add peanuts into a food processor. Set to high for 2 -3 minutes until it starts to form a paste-like texture.

Add in coffee grinds and coconut oil to the processor. Set to high and mix for another 2-3 minutes until it forms a liquidy consistency. Pour into a mason jar and enjoy! I would store this in the cupboard for 1-2 weeks and in the fridge for 3 weeks.

Note - depending on the power of your food processor, you will need to mix for longer than the times indicated above. In my old less powerful food processor, I had to mix for roughly 10 minutes to make nut butter.
