Loaded Peanut Butter Cup Blondies (GF+V)

I remember when I first started the blog Jacob got me a shirt that says "peanut butter is my spirit animal". It truly could not be any more true. I freaking die for peanut butter. I love it in savory recipes, sweet recipes, and just live for it in general. I am an au-natural girl when it comes to PB. I like it creamy, salty, and limited other stuff. I am not a JIFFY or SKIPPY fan TBH, they just do not do it for me. Way too sweet.

Anywho - I am so excited about this recipe because it is super easy, delicious, and has one of my fave things ever - DARK CHOCOLATE PB CUPS and CANDY COATED CHOCOLATE GEM (aka M+Ms).  You can use chocolate chips or a cut-up chocolate bar for this recipe too. Anything works!  This recipe is vegan with the exception of the cups or chocolate add-ins. If you add in vegan chocolate/ candy, you can make this recipe totally vegan. I linked some options below!

What you need: 

  • Peanut Butter - A lot. And make it creamy. Creamy nut butter of any kind really works. I can imagine almond and cashew would be delish, but I have not tested. 
  • Maple Syrup - Sweet sweet maple syrup!
  • Vanilla Extract - The usual. 
  • A Flax Egg - This a vegan "egg replacement" that brings in some of the binding consistency that eggs do. You combine ground flaxseed or flaxmeal and water for this.
  • Oil - I used olive oil. But Avocado oil or liquid coconut oil would work.
  • Baking Powder 
  • Almond Flour - I love this flour for this recipe because it gives an incredible cakey texture. This is one of my fave gluten-free flours. I have not yet tested other flours, but I plan to! 
  • All the candy mixins you love (linked faves on amazon) - chocolate chips, peanut butter cups, candy-coated chocolate .. the WERKS! 
  • Flakey Sea Salt  - To sprinkle on top!

Ingredients:

 ¾ cup Creamy Peanut Butter
 ½ cup Maple Syrup
 1 Flax Egg (1 tbsp Flax meal / Ground Flax Seeds + 3 Tbsp Water) Mix together and let sit for at least 10 minutes.
 1 tsp Vanilla Extract
 2 tbsp Oil (Olive, Avocado, Liquid Coconut can work)
 ½ tsp Baking Powder
 1 cup Almond Flour
 1 cup Mix ins (Loaded PB cups, chocolate chips, candy coated chocolate)
 Sea Salt for topping at the end (optional)

Directions:

Preheat oven to 350.

Prepare "flax egg". Combine 1 tbsp flax meal / ground flax seed with 3 tbsp of water. Mix and let sit for at least 10 minutes. It creates a thick "egglike" texture.

In a large mixing bowl, combine creamy peanut butter, maple syrup, oil, flax egg (when ready), and vanilla. Mix well!

Add in baking powder and almond flour. Mix very well so you get all the chunks out.

Time to add in the chocolate and candy! You can really add as much as ya want!

Line and grease an 8x8 baking dish with parchment paper and non-stick spray. Pour the batter into the dish. Use a spatula to get it all out and evenly spread. You can add a few more of the candy mix-ins on top.

Bake for 25-30 minutes.

Remove from oven and sprinkle with some flakey sea salt. LET COOL!!!! THIS IS VERY IMPORTANT. If you dig in right away, it will likely be super soft and potentially break (like any cookie or brownie). I let it sit for at least 15 minutes. You can even pop into the fridge to expedite. I personally these when they are completely cool!
