Mediterranean Orzo Pasta Salad

Mediterranean Orzo Pasta Salad! An easy summer staple that is perfect for meal prep, a BBQ side, or full lunch/dinner. I love pasta salads all year round, but in the summer they are particularly a fave. So refreshing and delicious!

Ingredients:

 ¼ cup Italian Dressing - I used Healthy Choice Power Dressing
 ½ red onion, diced (about 1/2 C)
 ¼ cup sun dried tomatoes, chopped
 ¼ cup fresh basil, chopped
  cup goat cheese crumbled
 1 cup orzo pasta, uncooked
 ¼ cup Kalamta olives, pitted and sliced
 Salt to taste

Orzo Pasta Salad

Directions:

Start with the orzo pasta. Cook according to instructions on the package. It should take 10-12 minutes.

While the pasta is cooking, prepare the rest of the ingredients. Chop the onion, basil, sundried tomatoes and olives.

When orzo is done, strain and rinses in cold water for a few minutes. You want the pasta to completely cool.

When the pasta is cool, add to a large mixing bowl followed by the sun-dried tomatoes, chopped basil, chopped onion, goat cheese crumbles, and sliced olives.

Pour Italian dressing on top. Toss well! Add in some sea salt to taste. Enjoy as a side or as a main. Keep in the fridge for up to 5 days. Enjoy!
