Vegan funfetti energy bites! These are like little cake pop size bites that are the perfect sweet treat and snack! I love when desserts can double as energy boosters - with ingredients like peanut butter and plant protein (or collagen) these do just that. Vegan funfetti bites can be enjoyed as a mid-morning snack or even thrown on top of a bowl of ice cream! Kinda goes both ways here. They are totally vegan if you used plant-based protein powder, but if not, you can use collagen powder which is a great (tasteless) way to add protein.

Notes: I have not tested any other flour for this recipe. I think almond is the best for this because of its cake texture. I am sure you can also sub honey for maple syrup and almond butter for peanut butter if you prefer.

For the Vegan Funfetti Energy Bites, you will need:

  • Peanut Butter (super creamy!)
  • Maple Syrup
  • Vanilla Extract
  • Almond Flour
  • Mild Oil - I used avocado oil, but liquid coconut oil or another vegetable oil would work too.
  • Protein source - Plant-based protein for vegan and collagen for non vegan. I personally would stick to tasteless options so you can get the full taste otherwise! Vanilla would be my second option.
  • LOTS of rainbow sprinkles!
Vegan Funfetti Energy Bites

 ½ cup Peanut Butter
 1 tbsp Oil (I used Avocado Oil)
 ½ tsp Vanilla Extract
 ½ cup Maple Syrup
 ½ cup Almond Flour
 1 tbsp Vanilla or Plain Protein Powder (or Collagen for non-vegan) *You can also do more flour here
 Lots of Rainbow Sprinkles!

In a mixing bowl, combine creamy peanut butter, oil, vanilla, maple syrup and flour.

Mix well using a spatula until a batter forms. Add in sprinkles and mix again.

Add in collagen and mix again really well. Lastly, add more sprinkles. Keep mixing until batter is smooth and thick! Like cookie dough.

Chill in the freezer for 20 mins.

Remove from freezer and start making the bites. Using an ice cream scooper scoop inch size balls of dough. Roll around the palm of your hand to make circles. Sprinkle more on top and keep rolling to allow the sprinkles to stick.

Continue until all the dough is used. It makes about 10 bites. Store them in the Ello Products container and then back in the fridge or freezer. You can keep them in the freezer and then them thaw out for a few minutes when you want to enjoy - or keep in the fridge. Both work!
