APPLE CINNAMON PANCAKES 🥞 If you are a brunch person, then this recipe is perfect for you! With less than 6 ingredients, they come together quickly and taste amazing. I know that they would be a major hit at your next Sunday brunch! Lately, I’ve been loving just taking a classic mix and adding to it. Aside from the delicious yet simple pancake mix, topping the pancakes with sautéed apples adds the perfect amount of texture and crunch to the soft and fluffy pancakes. I mean what could be better than cinnamon apples? Nothing! 😅 I hope you enjoy because I know I did!
What you will need for the Apple Cinnamon Pancakes:
- Medium Saucepan
- Pancake Mix - I used Birch Benders
- Water
- Cinnamon
- Unsweetened Apple Sauce
- An Apple
- Coconut Oil
- Maple Syrup (optional)

Add pancake mix, cinnamon and water to a mixing bowl and combine well. Add in apple sauce and mix again.
Slice half an apple into small 1 inch pieces. Sautée in a saucepan with coconut oil and cinnamon (or apple pie spice) on med- low heat. Toss/cook until caramelized.
In another saucepan, heat up non stick spray or more coconut oil. Pour pancake batter in 4-5 inch circles. Let cook until bubbly and golden on the outside. Flip and cook briefly on the second side. Repeat until all the batter is gone.
Stack up the pancakes, top with apples and drizzle with maple syrup! Enjoy!
