Easy Funfetti Blondies

The most delish and easy funfetti blondies! 
I wanted to create a FUN birthday-themed recipe to post to the blog for my bday this year. This recipe is a classic and is super SIMPLE. It is not remotely healthy and made with all the good stuff like butter and brown sugar! I am not one to avoid a “real” dessert on any occasion (thank you food freedom), but especially on my birthday. All the good things are meant to be enjoyed!!! I am thrilled for you guys to enjoy this treat! It’s sweet and decadent and amazing! Enjoy!

NOTE - I have not tested any other flour besides all-purpose flour. I can imagine a good quality gluten-free all-purpose would work too, but I have not tested. Also, I have not tested any butter subs or vegan subs yet. You can try using vegan butter and a flax egg. If you do, let me know in the comments. I also plan to test a vegan version soon doing just that!

Things you will need to make Easy Funfetti Blondie:

  • Large mixing bowl / Hand Mixer or Stand Mixer
  • Brownie pan
  • Butter
  • Brown Sugar
  • All-purpose flour
  • An egg
  • Vanilla Extract 
  • Funfetti Sprinkles 
  • Optional - white chocolate chops or other chocolate candy

Easy Funfetti Blondies

INGREDIENTS:

 ½ cup Butter (1 stick)
 1 cup Brown Sugar
 ½ tsp Vanilla Extract
 1 cup All-Purpose Flour
 1 Egg
 1 tsp Baking Powder
 Pinch of Salt
 Funfetti Sprinkles (as much as you want)
 White Chocolate Chips or any Chocolate Candy (optional)

DIRECTIONS:

Preheat oven to 350.

Soften butter by zapping it in the microwave or leaving it on the counter to get to room temp.

In a large mixing bowl (or stand mixer), add in softened butter, egg, and vanilla extract.

Mix well with a hand mixer or directly in a stand mixer. If the butter is softened enough, it should take a minute or two. If not, you may need to mix a little longer. You want it to be as smooth as possible.

Fold in brown sugar and flour. Mix again really well until a thick, sticky cookie dough forms.

Sprinkle in rainbow / Funfetti sprinkles. At this point, you may want to use a spatula (spray first to help with sticking) to do the final mixing to create the cookie dough.

Grease/line a brownie pan (8x8) and press the dough evenly throughout. I used my hands here! It does not need to be perfect because it will spread in the oven but do your best. Add more sprinkles on top and any other chocolate candy you wish!

Bake for 20 minutes. Let cool for 10 -15 minutes before removing from pan and cutting. Cut to whatever desired size you want! Usually cut 4 times through both vertical and horizontal to make 16 blondies!

Enjoy warm or store on the counter or fridge (in an air-tight container) for 3-4 days.
