Berry Lentil Summer Salad

I am ready for summer with this Berry Lentil Salad & homemade vinaigrette! 

Spring and Summer salads are my fave! This one has a little bit of sweet, a little bit of savory, and a lot of flavor. The homemade apple cider vinaigrette is so delicious and easy. It is a simple combination of fresh berries, feta cheese, chopped walnuts, berries, sliced avocado, and warm lentils. I LOVE lentils and I find they are entirely underrated. They pack a ton of protein, fiber and are very versatile. I love them in salads! They are great to meal prep and enjoy throughout the week too.  This salad is a great recipe to enjoy for lunch (hopefully outside while taking a break) or as a side dish for a big bbq! I know Memorial Day will not be the way it usually is this year, but that does not mean we can not cook some amazing food! 

In this recipe, I used a ton of Inspired Organics products! They have the best variety of organic household staples and fresh eats. Berry Lentil Salad

What you need for this recipe:

  • Fresh greens - I love crunchy gem lettuce and romaine, but any work! 
  • Fresh berries - I used strawberries and blueberries, but blackberries and raspberries would also be amazing.
  • Feta Cheese - For that salt savory flavor.
  • Lentils - Legumes packed with fiber and protein. 
  • Stock - I used vegetable stock for this. It gives the lentils more flavor when cooking. Any stock/broth should work.
  • Chopped Walnuts - gives the salad some crunch. 
  • Sliced Avocado - bc it's always needed!
  • Olive Oil, Apple cider vinegar, honey and sea salt for the salad dressing 

This recipe makes one large salad and a double serving of lentils (intended for meal prep purposes).

Ingredients:

Salad:
 3 cups Gem Lettuce (or greens of choice)
 ½ cup Sliced Strawberries (about 5-6 strawberries)
 ¼ cup Fresh Blueberries
 1 cup Dry Lentils
 1 cup Stock / Broth (To Cook Lentils) *You will have extra to use!*
 ½ cup Water (To Cook Lentils)
 2 tbsp Crumbled Feta Cheese
 2 tbsp Chopped Walnuts
 ½ Avocado, Sliced
For the Apple Cider Vinaigrette:
 ½ cup Olive Oil
 2 tbsp Apple Cider Vinegar
 1 tsp Honey
 Sea Salt to Taste

Directions:

Start by preparing the lentils. Rinse lentils in cool water. Add water, stock and lentils to a pot. Mix and bring to a boil. Once boiled, cover and reduce to a simmer. Let cook until tender. This should take about 15 minutes. They are done when they are tender.

While lentils are cooking, assemble the dressing ingredients (olive oil, apple cider vinegar, honey, sea salt) in a small mason jar. Shake well to mix! You can also mix in a small bowl with a spoon.

Starting with the lettuce, assemble all ingredients in a large salad bowl. When lentils are tender, let cool for a few minutes and then add on top. Dress with the vinaigrette and enjoy it! Option to add sliced avocado on top!
