Caesar Salad with Broiled Salmon

This Caesar Salad with Broiled Salmon was so good that I had it twice in 4 days! Caesar is such a classic, and this version reaches craveworthy with those big pieces of shaved parmesan. The salmon adds a great source of protein and makes this an easy, filling, and delicious meal any day of the week!

Here's what you need:

  • Romaine or gem lettuce -- go for romaine if you want more of a crunch!
  • Your favorite caesar dressing -- I like this one 
  • Parmesan or pecorino romano cheese
  • Salmon filet (about 8oz)
  • Your favorite blackening seasoning -- or just salt and pepper if you don't have a go-to seasoning blend

Ingredients:

 3 cups Heart of romaine or gem lettuce
 1 tbsp Caesar dressing
 Parmesan or Pecorino Romano cheese (however much you like)
 1 Salmon filet
 Blackening seasoning -- or chili lime, or simply salt and pepper (enough to cover the filet)
 Fresh ground pepper

Directions:

Wash and chop your lettuce, then drizzle with your favorite caesar dressing and top with a sprinkling of parmesan cheese.

Set your oven to broil and grease a small baking dish with oil (I like to use avocado oil). Add your salmon filet to the baking dish and season with blackening seasoning, chili lime seasoning, or salt and pepper. Broil for 5-7 minutes (my favorite way to cook salmon!). Depending on how thick your piece of salmon is, you may need to leave it in longer. I like mine medium.

Add the cooked salmon to the prepared salad and top off with some fresh ground pepper. The lemon pepper seasoning from Trader Joe's works really well here!
