Chocolate PB Banana Bread: Superfood Edition!

This superfood banana bread is a superfood take on a classic recipe!

Yields1 Serving

Ingredients:

 2 Spotty Bananas, Mashed
 2 Eggs
 ¼ cup Coconut Oil (melted & cooled or liquid)
 ¼ cup Creamy Natural PB + 1 tbsp for drizzling
 1 tsp Vanilla
 ¼ cup Cocoa Powder (Dutch Pressed for baking)
 ¼ cup Organic Coconut Sugar
 1 Pack of Simplifed Superfoods (chia, flax and hemp pre packed for easy convenience)
 1 tsp Baking Soda
 1 cup Gluten Free Oat Flour (my favorite for baking)
 1 cup Dark Chocolate Chips of Dairy Free Chocolate Chips

Directions:

Preheat the oven to 350.

Combine wet ingredient in a large bowl or stand mixer. Mix well! You want to get al the chunks our of the bananas and have the eggs fully mixed in.

Add dry ingredients into the bowl and mix well again (except chocolate chips). When smooth batter forms, fold in chocolate chips.

Grease a loaf pan (or muffin tin) with coconut oil spray. Pour batter into the loaf pan and shake lightly to distribute evenly throughout.

Drizzle creamy peanut butter on top of the batter. Use a knife to on the sharp edge to evenly distribute the peanut butter.

Bake for 55 minutes. If you are making muffins, bake for 25 minutes.
