This is such a simple and healthy way to enjoy salmon. It takes minimal ingredients, effort and is ready in no time! It is one of those dishes you can make to be eaten both hot and cold. I love this one to make in batches for meal prep because it goes with everything. In this recipe, I used a special seasoning from Trader Joes called "Lemon Pepper", but regular pepper works perfect here too. Highly recommend grabbing that seasoning from TJs next time though! It is one of my faves.
I usually purchase my salmon from Trader Joes or Whole Foods. Both offer great options. This recipe can be made with all types of salmon too. This is Atlantic, but it is delish with Alaska Wild and Coho too.
NOTE: Cooking time depends on a few things:
- How do you like your Salmon? I personally like mine more flakey / medium. So if you like it more well done, you should add a few extra minutes to the bake time.
- How thick is your salmon? This piece (pictured) was pretty thick, so I knew I needed to bake it for a few minutes longer than if this was a thin piece of the fish. You can always take it out and check it too. Better to do that than to overcook.

Preheat oven to 400.
Line a cookie sheet with parchment paper and spray with avocado oil.
Place salmon pieces on cookie sheet. Spray them generously with avocado oil and season with sea salt and pepper (or lemon pepper seasoning).
Slice lemon into thin slices and add on top of the salmon. You will probably need 2 circular slices per piece of salmon. Add more seasoning on top of lemon if you desire.
Bake for 10 minutes and broil for an additional 2 -3 minutes.
