It is no secret that I am obsessed with my air fryer. If you do not have one, I highly recommend it. It's an easy way to cook your veggies to get them nice and crispy! I use it to cook all types of veggies, from sweet potatoes to butternut squash and broccoli. I even use it for my veggie burgers and sometimes salmon too. It’s easy to use, easy to clean and everything takes under 20 mins!

Cut the squash in half. Using a spoon scoop out all of the seeds. Cut each half in half again length wise. Cut into quarter inch half moon shapes.
Grease the bottom of the air fryer with avocado oil spray and add in the pieces of squash. Add sea salt to taste. Set air fryer on 400 for 15 minutes. Remove drawer and shake every 5 minutes.
Once squash is tender and crispy, it is ready! Serve with some “everything but the bagel” seasoning and your fave healthy - ish ketchup.
