Gluten Free Pesto Pizza

You cannot go wrong with homemade pizza night! I love how simple this recipe is. I started with my favorite gluten free pizza mix and prepared it according to the package instructions. I used the Simple Mills Almond Flour Crust mix.I topped with my favorite store bought pesto from Trader Joe's (vegan kale cashew pesto), added caramelized onions and cheese. Such a simple combination, but it is so delish. I used Lifeway Kefir Farmer cheese for this recipe. It is a mix of ricotta and goat and went so well with this pizza. Lastly, I topped it off with chili flakes.

Ingredients:

 2 Medium Sweet Onions
 2 tbsp Avocado Oil
 Sea Salt
 ¼ cup Ricotta/Farmers/Goat Cheese
 3 tbsp Pesto
 Simple Mills Gluten Free Pizza Mix (you need apple cider vinegar, oil and water for this)

Directions:

Chop two medium onions julienne style. Heat up two tablespoons of avocado oil in a pan. Add in onions and sauté for 15-20 minutes until crispy. Mix frequently.

While onions are cooking, prepare gluten free pizza mix according to directions on the box.

Once dough is ready, line a pan with parchment paper, grease the pan and form the dough into a circle (or heart like me!). Make sure the edges are thicker for good pizza crust.

Spread the pesto on dough until even. Add in clumps of ricotta/farmers cheese/goat cheese. Sprinkle with sautéed onions!

Bake according to instructions.
