Gluten Free Apple Cinnamon Power Oatmeal Bowl

Oatmeal is truly such a comfort for me in the winter. Just nothing better than a warm, cozy and delicious bowl of oats in the morning. I love making oatmeal bowls that are packed with protein and also taste amazing without too much sweetness. Enter The GFB Oatmeal packs. They are such a life-savor. They come ready to make in a to go packet (just add water) or you can use them to make stove top oats like this. For this recipe, I used the Apple + Cinnamon flavor of The GFB Oatmeal.  Each packet packs 10g of protein and is made with simple ingredients like: certified gluten-free oats, dates, dried apples, raw hemp seed hearts, pumpkin seed protein, toasted sunflower seeds, organic date sugar, flaxseed, cinnamon, and sea salt. Those sound pretty great to me! Plus, in this recipe I added an egg white to make the texture fluffy and adds even more protein! Such a satisfying breakfast!  I topped it with warm sautéed honey-crisp apples pieces and of course a (large) dollop of creamy almond butter. Does not get better than this!

Gluten Free Apple Cinnamon Oatmeal

This recipe serves 2 people or 1 very hungry person!

Ingredients:

 2 Packets of The GFB Apple + Cinnamon Oatmeal
 1 Egg White (from one whole egg)
 1 tsp Cinnamon
 1 cup Almond Milk (or milk of choice)
 1 tbsp Coconut Oil
 1 Medium Apple
 1 tbsp Almond Butter

Directions:

Cut up one medium apple into small 1/4 inch cubes and set aside. I love a honey-crisp here, but any type of apple works!

Heat up coconut oil in small saucepan. When hot, set heat to medium and add the apple pieces into the pan. Use a spatula to mix around and coat the apples in the melted coconut oil. Sprinkle cinnamon on top and mix again. Let it cook with frequent mixing. It will take about 7 minutes for the apples to cook.

While the apples are cooking, prepare the oats. Add 2 packets of The GFB Apple + Cinnamon oatmeal to a small pot. Add almond milk and mix well. Set heat to medium. Let cook with frequent mixing for 5 minutes.

When the oats start to thicken, add in the egg white. Mix / fluff the oats for another minute or so until everything is cooked.

Add the cooked oats and apples into a bowl. Drizzle or add a scoop of almond butter on top. Mix it all up and enjoy!
