Hello Gluten Free Peppermint Brownies - let the holiday recipes begin! I love this time of year for creating some new, fun, healthier versions of baked goods for the holidays. I love gingerbread flavors, peppermint, and of course, chocolate! These are my holiday brownies and I am so excited for you guys to make them.
What you need:
- Greek Yogurt (You can use Coconut cream or non-dairy "greek yogurt" too)
- Egg
- Maple Syrup
- Peppermint Extract
- Coconut Sugar
- Cocoa Powder (you want it to be a baking version so it is not too bitter)
- Almond Flour
- Baking Powder
- Dark Chocolate Chips / Dairy Free Chocolate Chips
- Some chocolate hazelnut butter for spreading on top! So good!
I love using greek yogurt in baking because it adds an amazing texture and of course, some protein. If you are dairy free, make sure the yogurt alternative is "greek style" and thicker. If it is too runny the texture may not work.

Preheat oven to 350.
Crack egg into a large mixing bowl and whisk well. Add in greek yogurt, maple syrup, and peppermint extract and mix well until everything is combined.
In a separate bowl, combine the dry ingredients (almond flour, coconut sugar, cocoa powder, baking powder) and mix. Make sure to get out all the chunks from the almond flour and cocoa powder.
Add dry ingredients into the bowl of wet ingredients. Mix well using a hand mixer or spatula. You want the batter to be smooth!
Fold in chocolate chips. Mix again.
Grease and or line an 8x8 baking dish or individual brownie pan. Pour in batter evenly. Sprinkle more chocolate chips on top!
Bake for 25 minutes. Let cool and enjoy! I love spreading some peanut butter or chocolate hazelnut butter on top!

Could we use all purpose flour here?
