PASTA WEEK DAY 5: GNOCCHI PARMA ROSA 🍝 These are little pillows of heaven in a classic luscious pink sauce! I hope you love it as much as me.
Gnocchi Parma Rosa (Serves 4-6)
2 Tbsp Olive Oil
2 Tbsp Butter
1 Small Sweet Onion, Diced (Or half a large one)
1 Clove Garlic, Minced
2 Tsp Dried Basil
1 Tsp Dried Oregano
1/4 C Tomato Paste
2 Cans Tomato Purée, 20 oz total
1 C Heavy Cream
1 C Parmesan, Freshly Grated (and more for topping)
2 Packs of Gnocchi (17.5 oz each)
Salt (for water)
Reserve Pasta water
Garnish - fresh pepper, fresh basil, shaved Parmesan, drizzling olive oil
Boil generously salted water in a large pot for gnocchi.
Add olive oil and butter to a pan and heat on medium-low.
Add diced onions and garlic. Cook down until onions are tender.
Add dried basil, diced oregano, and tomato paste. Mix and break down tomato paste with a spatula.
Add in tomato puree, cream, and parmesan cheese. mix well and let simmer. Frequently mix until a smooth sauce is formed.
When the sauce is just about ready, add gnocchi to the boiling water. Remember, it cooks SO fast. It usually takes 2-3 minutes. Once they float to the top, remove them and add them to the sauce.
Add a splash of water and mix well.
Serve with fresh basil, fresh ground pepper, shaved parmesan and a drizzle of olive oil.
