Oat Chocolate Chip Bars! Easy and quick to make and they are melt in your mouth delicious!

Oat Chocolate Chips Bars! I was playing around with recipes the other day because I was craving something sweet and wanted to use oats. I am still breastfeeding so anything with oats in it is good for me and my supply. These bars are buttery and melt in your mouth delish. They are so easy to throw together (literally one bowl) and are a must-try. I promise everyone will LOVE these oat chocolate chips bars! Don't forget to tag me on IG @saridiskin if you make them!

Recipe Notes:

  • You can either purchase oat flour on its own or you can blend rolled oats. Either works.
  • I am also testing out a vegan version this week so I will update the recipe when I have it. For this, I am going to sub regular butter for the vegan baking butter alternative, the same amount. Replace the egg with 1 flax egg (1 tbsp flax meal with 2 tbsp water. Mix and let sit for 10 mins to form an egg texture). Use vegan chocolate chips. People have told me earth balance works great!
  • If you want to make these regular chocolate chips bars and not OAT you can just sub the oat flour and the oats for all-purpose flour. I have not tested any gluten-free flours like almond or coconut. If you are looking for that type of recipe, check out these blondies! Also DELISH!
  • I have not tested other sugars like coconut or granulated sugar. The brown sugar really is the best one for this recipe.

Oat Chocolate Chip Bars

INGREDIENTS:

 ½ cup Softened Butter (1 stick)
 1 cup Brown Sugar
 1 cup Oat Flour
 ¼ cup Rolled Oats
 1 Egg
 1 tsp Vanilla Extract or Baking Vanilla
 1 tsp Baking Powder
 Pinch of Salt
 ½ cup Chocolate Chips

DIRECTIONS:

Set oven to 350.

Soften butter by zapping it in the microwave on low for 10-20 seconds.

Add all ingredients (except chocolate chips) to a mixing bowl and mix with a hand mixer. Mix well until dough is formed. Sticky yet smooth.

Fold in chocolate chips.

Line an 8x8 pan and evenly spread out the batter. Option to add more chocolate chips on top. Bake 350 for 20-25 mins.

Let cool for 15. Cut into squares. Enjoy!
