Oatmeal Cinnamon Banana Pancakes

Bananas are a star of the easy breakfast game, and these Oatmeal Cinnamon Banana Pancakes just show that their versatility is endless. These pancakes are delicious, easy, and perfect for a lazy weekend breakfast. Plus, they're refined sugar free and, if you use certified gluten free oats, gluten free as well! I also love these pancakes because I can add some protein or collagen powder just for that extra boost in the morning, but it's totally optional in this recipe. Let these pancakes and their classic flavors be your blank canvas and get creative with your toppings! I love a dash of maple syrup and a sprinkle of chocolate chips on mine!

When I struggle with getting my pancakes to cook up in neat little circles (we all have those mornings), I love using these Norpro Silicone Rings, which are great for eggs or pancakes! They even make ones shaped like hearts, if you want something a little extra special. 

Here's what you need:

  • Ripe bananas -- the riper your bananas and the more spots they have, the sweeter your pancakes will be!
  • Egg
  • Oat milk -- I haven't tested this with other milks, but I'm sure whatever you have on hand (almond milk, coconut milk, regular dairy milk) would work fine
  • Vanilla
  • Baking powder
  • Oat flour -- you can find this in most grocery stores, but you can also make it at home by grinding rolled oats in a high-powered blender or food processor
  • Rolled/instant oats -- make sure they're certified gluten free if that's important to you
  • Protein or collagen powder -- I think this helps make these pancakes even more satisfying, but you can still leave it out!
  • Cinnamon

Yields1 Serving

Ingredients:

 2 Ripe Bananas
 1 Egg
 ½ cup Oat Milk
 1 tsp Vanilla
 1 tsp Baking Powder
 1 cup Oat Flour
 1 cup Rolled/Instant Oats
 2 Scoops Protein/Collagen Powder (optional)
 1 tsp Cinnamon
 Chocolate Chips & Maple Syrup, for topping

Directions:

Mash bananas in a large mixing bowl, then add in the other wet ingredients (egg, oat milk, and vanilla).

Add the dry ingredients (baking powder, oat flour, rolled/instant oats, protein powder if using, cinnamon) to the bowl and mix until well combined.

Heat oil or butter in a pan or griddle. Carefully pour a small ladle of the batter onto the pan. Let cook until the edges start to brown and bubbles start to pop on the top. Flip and cook on the second side for half the time as the first. Repeat with remaining batter.

Serve with sliced banana, more cinnamon, chocolate chips, and maple syrup.
