Sweet & Savory Summer Fruit Salad

At the height of the summer, I love taking advantage of all of the in-season produce, and that's exactly what this recipe does! This Sweet & Savory Summer Fruit Salad is light and fresh, perfect for these hot and humid days, and it hits all of those cravings with peaches and watermelon paired with feta cheese for that savory kick! With just a few ingredients you can pick up from your local grocery store or farmers market, this salad packs a big flavor punch! I love, too, that all the ingredients have different textures that come together so well in this dish. Not only is this fruit salad delicious, but it's so easy to throw together, and it travels well. I wanted to enjoy some of these summer days outside, so I brought some with me for a picnic in the park -- it was the perfect pick me up!

I packed it all up in my Ello 3 Cup Glass Meal Prep Bowl, one of my favorite containers for storing and transporting food. I find that it's the perfect size, and I love how durable and easy to clean it is. The silicone sleeve not only adds a layer of protection, but also a pretty pop of color! LET'S GET TO THE RECIPE!

Here's what you need:

  • Peaches
  • Watermelon
  • Cherry tomatoes
  • Red onion
  • Feta cheese
  • Mint
  • Basil
  • Olive oil
  • Apple cider vinegar
  • Honey
  • Balsamic glaze
  • Sea salt

Ingredients:

 2 Peaches
 2 cups Cubed Watermelon (about half a small watermelon)
 1 cup Sliced Cherry Tomatoes
 ½ Red Onion, chopped and sliced thin
 ½ cup Cubed or Crumbled Feta Cheese
 1 tbsp Chopped Mint (or to taste)
 1 tbsp Chopped Basil (or to taste)
Dressing:
 ¼ cup Olive Oil
 1 ½ tbsp Apple Cider Vinegar
 1 tsp Honey
 Balsamic Glaze to taste
 Sea Salt to taste

Directions:

Prepare the salad ingredients. Wash and chop all fruit (watermelon, peaches) into cubes, if not pre-cut. Dice the onion into small pieces. Slice the cherry tomatoes in half.

Prepare the dressing. Add all dressing ingredients, except the balsamic glaze, to a small mason jar and shake well to mix.

Add all of the salad ingredients and the dressing to a large mixing bowl and toss together. Drizzle balsamic glaze over the salad and toss again.

Transfer to Ello container and store in the fridge, of bring on a picnic like me!
