ONE SHEET DINNER: CHILI LIME BUTTERNUT SHOESTRING FRIES & SALMON

Ok guys, this dinner is seriously SO easy! It came together in literally 20 minutes and was so tasty and satisfying. There is something about cooking everything on one sheet in the oven that makes life so much easier and gives us way less to clean. Win-win!

I love using Cece's Veggie Co Noodled Butternut Squash Spirals to make shoestring fries. They crisp up so nicely in the oven and paired with the onion - the taste really comes through. It is just another way to get in those veggies in a non-boring way (I am all about that). The texture and consistency really taste like shoestring fries, especially if you choose to broil them like I encourage in the directions.

Ingredients:

 ½ Container of Cece's Veggie Co Noodled Butternut Squash Spirals
 ½ l Large Sweet Onion
 1 Serving of Salmon (I used a thick filet)
 2 cups Greens of your choice + Dressing
 Chili Lime Seasoning from Trader Joe's to Taste
 Avocado Oil Spray
 Sea Salt to Taste

Directions:

Preheat oven to 400.

Chop up 1/2 a sweet onion "rainbow style". Cut whole onion in half and then in thin slices creating thing half circle shapes.

Line a large cookie sheet with parchment paper with grease with avocado oil spray.

Spread Cece's Veggie Co Noodled Butternut Squash and onion slices across the sheet. In the middle of the sheet, make room for the salmon and place on the sheet. Spray everything with more avocado oil and sprinkle with sea salt and chili lime seasoning.

*Chili lime seasoning is from Trader Joes, it is one of my favorite seasonings. I use it with literally everything.

*If you do not have this seasoning, paprika would also be delicious.

Place cookie sheet in the oven and bake for 10 minutes on 400. Broil for an extra 3 - 5 minutes on hi for extra crispiness!

You can adjust based on your oven and how you like your salmon. If you like your salmon more well done, leave it in for longer. If you like your salmon medium, you can remove it for the broiling.

Toss some greens with your favorite dressing to pair with this dish!
