Growing up, zoodles meant those canned animal shaped noodles in red sauce. I loved them at the time, but thinking about it now just makes me a little nauseous! Things have changed! Today, zoodles mean a delish and healthy alternative to pasta night. Zoodles = zucchini noodles. They take no time to cook and give you the feeling of spaghetti! It is fun! Now, of course, I enjoy spaghetti too and sometimes I even mix them half and half. I love an excuse to get in more vegetables into what would normally be a very carbohydrate dense dinner. Heat up oil or grass-fed butter in a large pan on medium. Once sizzling, add in chopped onions and let it cook for 3-5 minutes until they start to brown.
Once the onions are cooked, add in defrosted shrimp. Mix around and let cook for 5 minutes. Shrimp cooks really fast! You will know they are cooked when they curl and are opaque.
Add in cherry tomato slices and mix around with the shrimp and onions. Let it cook for 2 minutes.
Move shrimp, onions, and tomatoes to one half of the pan. Add a little bit more avocado oil / grass-fed butter to the pan before add in the Cece's Veggie Co Noodles Organic Zucchini. Once you add in the zoodles, mix them around in the oil so that they are coated. They will also cook very quickly. Just saute them for 2-3 minutes.
Once the zoodles are fairly cooked, add in the tomato sauce. Mix everything together and give the tomato sauce a few minutes to heat up. Once it is hot, you will be ready to enjoy the dish! You can add some pecorino cheese or fresh cracked pepper on top!
